Gluten Free Banana Bread Recipe

Have some bananas that are starting to look far from ideal? And a little bit of a craving for something delicious but also nourishing? Why not try this banana bread. It is super easy to make and ingredients can be somewhat improvised.

Recipe

Dry Ingredients:
2 cups plain flour (or self raising but don’t use the baking powder and bicarbonate soda)
2 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp of salt
180g choc chips/melts

Wet Ingredients:
4 very ripe bananas (400g min but more is best)
3 eggs
1 tsp vanilla
3/4 cup maple syrup/panela/sweetener of choice (optional)
1/3 cup melted coconut oil

~Preheat your oven to 180 degrees celsius
~Grease a cake pan with coconut oil
~Mash your bananas
~Mix your dry ingredients together (except for the chocolate)
~Mix your wet ingredients together
~Mix the wet and dry together
~Add in your choc chips if using. Can also add nuts, dried fruit or seeds.
~Pour into your cake pan
~Sprinkle with some raw sugar for a delicious crunch
~Bake for 50 minutes to 1 hour until a skewer comes out clean

Best served hot with butter spread on top
